Thanksgiving Recipes
On Thanksgiving the oven is usually the bottleneck, so this menu spreads the cooking out. The turkey gets the oven. The stuffing, mashed potatoes, sweet potato casserole and mac and cheese cook in slow cookers, and the carrots and stuffed mushrooms go in the air fryer.
The pies, cheesecake and cranberry sauce can all be made one to three days ahead. For a smaller table, cook a turkey breast in the air fryer or slow cooker instead of a whole bird, and there's a vegan stuffed squash for anyone who skips the turkey. Whether you celebrate in October or November, the recipes work the same way.

Savour's Thanksgiving recipes cover the whole meal: herb butter roast turkey (3 to 3 3/4 hours for a 5.5-6.5 kg bird), slow cooker or air fryer turkey breast for smaller groups, slow cooker stuffing, mashed potatoes, sweet potato casserole and mac and cheese, plus cranberry sauce, green beans almondine and a vegan stuffed squash. For dessert there's pumpkin pie, pecan pie and pumpkin cheesecake, all made 1-3 days ahead.

Frequently Asked Questions
When should I start cooking for Thanksgiving?
Start 3-4 days ahead by thawing the turkey in the fridge, allowing about 24 hours for every 2-2.5 kg (4-5 lb). Make the cranberry sauce and pumpkin cheesecake 2-3 days ahead, and bake the pies and dry the bread for the stuffing the day before. On the day, a 5.5-6.5 kg turkey goes in the oven about 4 1/2 hours before you plan to eat.
How do I free up oven space on Thanksgiving?
Give the oven to the turkey and cook the sides elsewhere. The stuffing, mashed potatoes, sweet potato casserole and mac and cheese all cook in slow cookers, and the carrots and stuffed mushrooms take 8-18 minutes in the air fryer. Bake the pies the day before. The sweet potato casserole needs just 1-2 minutes under the broiler, which you can do while the turkey rests.
How big a turkey do I need?
Allow about 500 g (1 lb) of whole turkey per person, or 750 g (1 1/2 lb) if you want leftovers. A 5.5-6.5 kg (12-14 lb) turkey serves 10-12 people. For 6 or fewer, a 1.2-1.4 kg boneless turkey breast roast in the air fryer is plenty.
What is a good vegetarian Thanksgiving main?
Wild rice stuffed acorn squash is vegan and gluten-free, and half a squash makes a filling main. Most of the sides are vegetarian too: the stuffing and mashed potatoes are made with vegetable broth, and the green beans, carrots, salad, cranberry sauce and pies contain no meat.
