Easy Moroccan Recipes to Cook at Home
Moroccan home cooking is built on slow simmering and warm spices: ginger, cumin, turmeric, paprika and cinnamon, often with a little sweetness from dried fruit or honey and plenty of fresh parsley and coriander. Our Moroccan recipes cover the dishes families cook most, from tagines and a Friday-style vegetable couscous to harira, the soup many people break their fast with during Ramadan.
Each one is written for a regular kitchen. You don't need a clay tagine or a couscoussier: a Dutch oven, a deep skillet with a lid and instant couscous do the job. Where we simplify, we say so, and we suggest swaps for anything harder to find, such as ras el hanout or saffron.

Quick answer
Savour has four Moroccan recipes. The quickest is kefta tagine, beef meatballs and eggs in spiced tomato sauce, ready in 55 minutes in one pan. Vegan vegetable couscous with tfaya takes 75 minutes, harira soup with lentils and chickpeas 1 hour 40 minutes, and lamb tagine with apricots 2 hours 40 minutes, most of it hands-off braising.

Frequently Asked Questions
Do I need a tagine pot to cook Moroccan food?
No. A heavy Dutch oven or a deep skillet with a tight lid works just as well for every tagine on Savour. If you use a clay tagine, keep the heat low and put a heat diffuser under it, because clay can crack over direct high heat.
What spices do I need for Moroccan cooking?
Ground cumin, ginger, turmeric, cinnamon, coriander, sweet paprika and black pepper cover all four of our Moroccan recipes. Saffron is a nice extra but optional. Ras el hanout is a ready-made Moroccan blend you can use in place of the separate spices in the lamb tagine.
Which Moroccan recipe should I start with?
Start with kefta tagine: it takes 55 minutes, cooks in one pan and uses supermarket staples. The vegetable couscous is a good vegan choice for a crowd. Save the lamb tagine with apricots for a weekend or for guests, because it braises for over 2 hours and tastes even better the next day.
Are Moroccan recipes gluten-free?
Our lamb tagine and kefta tagine are naturally gluten-free, so serve them with rice or gluten-free bread. Couscous is made from wheat, and harira contains vermicelli and flour, so neither is gluten-free as written.
